Ingredients
12 oz rotini or penne pasta
1/2 cup cherry tomatoes, halved
1/2 cucumber, diced
1/4 red onion, thinly sliced
1/2 cup chopped pepperoncini or banana peppers
1/2 cup cubed salami or pepperoni
1/2 cup cubed provolone or mozzarella cheese
Optional: handful of chopped fresh parsley or basil
Preparation
Cook pasta in salted water until al dente. Drain and rinse under cool water.
While pasta cools, prep and chop all other ingredients.
Whisk together dressing ingredients in a small bowl or shake in a jar.
In a large bowl, toss together pasta, meats, cheeses, veggies, and herbs.
Pour dressing over top and mix gently but thoroughly.
Chill for at least 30 minutes if you can. The flavors get better.
